Teacher Appreciation - Royal Icing Cookies
One day I was on Facebook and I saw this adorable little video:
Like any normal sane person, my first thought was, "I can so totally do that!"
My next thought was, "...what is Royal Icing and why is it so special?"
Do you know one thing about me?
I. Can't. Bake.
I don't bake. I can't bake. The only thing lumpy in my chocolate chip cookies are the chocolate chips. My mother-in-law owns her own cake business and I can't make a darn chocolate chip cookie.
Baking be darned! I was going to make Royal Icing!
So I took to the internet! I found a recipe, I did some research, I pinned a few things. I went to the dollar store. I went to Michael's. I went to the grocery store.
My recipe indicated a yield of 40 cookies....I think I "yielded 20"...but maybe it's because my cookie cutter was so big?
I'm not sure - but what I do know is that my cookies didn't bubble out like my cut out cookies always do. I mean, those are apples - and you can tell they are apples! They also didn't brown like the recipe said they wouldn't. So I mean...I feel like I already had success.
And I'll say this - They are delicious!! The don't fall apart and yet they frost well. The are super soft and moist, but not crumbly. AND they have a delicious almondy taste to them. Oohh man, I could just pop a bunch of those bad boys in my mouth!
But I had to frost them.
Oh boy.
I had to frost them.
First I made my "Piping" frosting. I mean...I could turn this into a tutorial of sorts, but let's be honest...no one is going to come to this blog to learn HOW to do Royal Icing cookies...so if you want to know about piping...Google search it...like I did :) You can learn a lot!
I think my consistency was pretty good...but let's be honest. Surgeon, I am not. My outline is all squiggly - not straight. It looks like a 3 year old out lined those cookies....But I was going to fill them in...so I bet it's OK - right? Practice - right? Imagine what they will look like next time!
So I piped and let dry.
Which happened pretty quickly, so I thought...why not flood right away? I was ITCHING to flood!
And let me say this about Wilton Gel Coloring....
It's some serious stuff! Yup...I'm pretty sure my counter will be red until I replace it. No...this was not intentional for that very reason!
But guess what? I don't think it looks that bad!
So here they are!!! My Royal Icing Cookies! I think they look amazing! NOTHING like the video. But for my first try? I think they are AWESOME! I can't wait to make MORE COOKIES! Can someone have a party so I can bring cookies? I need to practice!
Well....maybe first I should go clean up my mess!

I mixed my flooding icing and got to work. So here's problem one...I think my flooding frosting was too thin. Maybe. It didn't fill in/spread out as nicely as it did in the video. So I just kept adding more...which eventually caused some overflow!
Oh man - that is one sad picture! And let me say this about Wilton Gel Coloring....
It's some serious stuff! Yup...I'm pretty sure my counter will be red until I replace it. No...this was not intentional for that very reason!
So, I thought my icing was too thick at first, so I added some more water to the squirt bottle and shook it....which I think, in the end, is what caused some of my cookies to have tiny air bubbles in the frosting...which I didn't really take any pictures of...because no one wants to see a picture of a cookie with bubbly frosting...but why? Why oh why were there bubbles? Back to the internet I go!
I let my cookies dry overnight and then added the detail tonight. I added my little seeds to the "open" cookies, the stem and the leaf.
And then I got brave. Or stupid. I'm not sure which. And I thought...what if I write "Thanks" on each of the cookies? In my horrible 3rd grader penmanship. What if I write thanks with this wobbly frosting coming out of a plastic bag?
But guess what? I don't think it looks that bad!
So here they are!!! My Royal Icing Cookies! I think they look amazing! NOTHING like the video. But for my first try? I think they are AWESOME! I can't wait to make MORE COOKIES! Can someone have a party so I can bring cookies? I need to practice!
